A restaurant was given a contract for a year and was to open the 6th June and have not been in complying with the contract due to persons are not able to get items for the restuarant, the delay of government signing off on documents, which now have cause the delay in opening to the 4th July

Good Day Mr. Martin/Mrs. Hodge,
I am expressing my concern about the build-out process.
In our earlier conversations, we discussed certain changes that would be needed in the space. The two front doors were discussed, and it was agreed that they needed to be changed. Further, I was informed that Linges was scheduled to measure for the replacement doors. I observed during this week that the work on the doors needs replacing.
Additionally, the layout submitted includes pendulum lights, this was also a part of our numerous discussions. However, fluorescent lights were installed after a discussion, they were removed and replaced with lights made for walls.
On Tuesday of this week, I observed that food warmer display units were placed within the space. Mr. Martin indicated that they would replace the space built to accommodate food trays. This was after a conversation with Mrs. Hodge regarding the type of warmer apparatus that would be used, whether electrical or gas.
As discussed on several occasions, the layout presented to the Authority must be followed. Any changes must be first discussed with the Authority before implementing.
In light of the above and as discussed throughout this week the following must be addressed:
The lights must be in accordance with the layout submitted; pendulum lights are to be used.
The 2 front doors must be changed.
The food warmers cannot replace the area slotted for the trays. The food warmers can be utilized for food such as patties and meatballs as the warmers are display units.
As noted in the Tennant design criteria, there is a certain standard for restaurants and shops within the airport that all operators must comply with.
On another note, Mrs. Hodge, Mr. Martin indicated that the agreement has been signed, kindly submit it on Tuesday before the end of business day, 4pm.
Lastly, Mrs. Hodge, just a gentle reminder to send me an email regarding differing the open date set for June 6th and informing me of the new opening date.
